  • Wrens Abruzzi is an early winter rye which has a subtly sweet flavor profile. However, it is also a great choice for the pie crust of a quiche.

    Flour quality
      Wrens Abruzzi is a strain of the much older Italian Abruzzi rye that was developed in 1953 in Georgia. It is good for baking; specifically, the use of the sifted type '00' quality in a pâte brisée makes for amazing shortbreads and pie and tart crusts.

      The whole wheat quality is stone-milled at Dutch Fika (grain berries sourced from Barton Springs Mill).

      The '00' type quality is stone-milled and sifted at Barton Springs Mill.
