Red Fife whole wheat
  • Red Fife is a wheat variety with a strong wheat flavor, that originated in Ukraine and was brought to Ontario by farmer David Fife in 1840.

    Flour quality
    • Despite the low protein percentage of 10.15%, it makes a strong dough and works well in pizza, pasta, artisan bread, and pastry applications.

      The whole wheat quality is stone-milled at Dutch Fika (grain berries sourced from Barton Springs Mill).

      The '00' type quality is stone-milled and sifted at Barton Springs Mill.
