The Nordic rye bread is an organic sourdough bread that is 100% rye, which makes it suitable for the Metabolic Balance program. It has an open crumb sandwhich-style crumb. The rye is stone-milled and sifted on the day the dough is made, ensuring that all the nutrients in the rye are present in the bread.

Our Nordic 100% rye sourdough bread is made with the classic 3 ingredients: rye, water and salt. The wild yeast* in the levain is responsible for the formation of the moist open crumb. This rye bread has only the mildest hint of the lactic flavor characteristic for sourdough breads.
