  • Hopi blue is a heirloom corn variety with a pure, amplified corn flavor, good for blue cornbread or, when nixtamalized, for blue tortillas.Because the corn is stone-milled, no wheat flour nor sugar needs to be added to a recipe.

      Precursors of this strain of flint corn have been raised continuously for 800 years on the mesas of northern Arizona and are used by the Hopis to make ceremonial Piki Bread.

      Whole kernels can be nixtamalized for masa to make blue tortillas.
