Frederick is a wheat cultivar that was developed in Ontario in the late 1960s and first brought to the market in the early 1970s.
The wheat has about 10% protein and due to its soft, mildly sweet flavor is excellent pancakes, quick breads, quiche, biscuits and crackers.
The whole wheat quality is stone-milled at Dutch Fika (organic grain berries sourced from the Mill at Janies Farm).
