Einkorn (also known as Farro Piccolo), is a grain derived from Farro Grain. It has been domesticated and cultivated since pre-historical times. Einkorn berries are shaped like rice, with a golden brown hue and a nutty flavor. Einkorn has a higher percentage of protein than modern red wheats and is considered more nutritious because it also has higher levels of fat, phosphorus, potassium, pyridoxine, and beta-carotene.

Despite its high protein content, 100% Einkorn bread doughs tend to be quite loose and should either be baked in a pan, or be added (up to 30%) to flour that form firmer bread doughs . Einkorn is absolutely delicious in pancakes, cookies and waffles.
