The Dutch are very fond of their soft white and whole wheat rolls with cheese, cold cuts, chocolate sprinkles or jam either at home for breakfast or lunch or on the road for a picknick or a school trip.
At Dutch Fika, these rolls are of course made with freshly stone-milled heritage wheats, real butter and farm-fresh eggs.
Dutch soft buns
For the Dutch rolls, a direct fermentation method is used, proofing the dough en bulk for about 2-3 hours, before shaping and baking these. We use mix a soft and hard wheat with some typical ingredients, like butter, egg, salt, yeast milk/kefir and water.
For the krentebollen, sugar and a mixture of currants and rasins are added to the dough.
