The Swedes have a strong liking for their sweet rolls - bullar - with their fika. At Dutch Fika, these rolls are of course made with freshly stone-milled heritage wheats, real butter and farm-fresh eggs.
Swedish sweet rolls
For the sweet rolls, a direct fermentation method is used, proofing the dough en bulk for about 2-3 hours, before shaping and baking these. We use mix a soft and hard wheat with some typical ingredients, like sugar, salt, yeast, butter, egg, milk/kefir and water.
Different spices - like cardamom, cinnamon, saffron -, dried fruits or marzipan are added to these doughs to make kanelbullar (cinnamon), saffron bullar, or semlor (cardemom buns filled with marzipan and whipped cream).
